METHOD
Braize 1 onion in ghee (Clarified butter) add Cinnamon stick, Elachi (cardomom), peppercorns and whole jeeru (cumin)..Add in 1kg beef bones add in a a quarter teaspoon haldi grinding of pink Himalayan salt, half teaspoon pepper, black/white or both, few whole cloves of garlic cut up and some ginger. Braize nicely until all the oil comes to the surface.. Then add 2 cups water and cook for about an hour on low heat.
Meanwhile, cut up a packet of soup greens (carrots, turnips, parsley and celery) everything can be cubed.
In a dish add ¼ cup rice 2 tablespoon pink dhal, 2 tablespoon oil dhal 2 tablespoon channa dhal, add 2 cups water and allow to soak..this can be done in advance.
Seperately add 3 tablespoon oats soak in hot water( this is added later)
Add rice mix to meat and allow to cook until well absorbed. Then add cut up vegetables fill pot up with water and continue cooking on low heat for a few hours. U will notice, soup is now blended nicely and meat is tender.. U can now remove some of the veg and blend if u want a smoother consistency. If u prefer a broth like soup u can leave it. Add in the soaked oats and cook until it's dissolved nicely.
Take 1 packet knorr thick vegetable soup and dilute in 1 cup water beat nicely.. Pour into soup and cook until u have achieved the consistency u like.. More salt and pepper can be addedThis soup is best served with hot buttered toast. Deliciousness!!!
