½ Cup Boiled Mashed Potato ½ Cup Corn flour½ Teaspoons Chili Powder½ Teaspoons Garlic Powder½ Teaspoons Salt¼ Cup Warm Water
Knead all the ingredients until well combined and form a dough. Roll the dough into a round log. Boil the log in a pot of water over medium heat for 25 minutes. Remove and let cool completely. Then keep refrigerated for 6 to 8 hours to become firm for easy slicing. Slice the log into chips (cracker) pieces.Place the chips in a tray and dry under sunlight for 8 to 10 hours. ( you can also dehydrate these sliced chips in oven - 50 to 60 degrees C with fan for about 8 to 10 hours)Once dried, deep fry on medium high heat till they puff up.Serve with a dip and Enjoy!

You can do the same with prawn mince instead of potato to make prawn crackers.
You can use steaming instead of boiling to retain more flavour in the dough as it can leach out into the water.
You can microwave them for a short time till they puff up too, a good alternative to deep frying. You just need to keep an eye on them because they can get burnt easily.
