500gr boneless chicken diced.1 tablespoon garlic paste 1 teaspoon red chillie powder 1 teaspoon coriander powder 1 teaspoon cumin powder 2 teaspoon cayenne pepper SaltCrushed black pepper 1 tablespoon oil
Wash chicken, dice & pat dry using a cloth. Rub in all the spices.
Malai:1 cup fresh cream (I prefer long life)Half cup double cream plain yoghurt @parmalatsaQtr bunch green coriander leaves A few mint leaves 2 green chillies Salt
Blend the above into a paste.Add 2 tablespoons to the chicken, combine well & marinate for atleast an hour.Keep the rest for basting & serving.
Skew the diced chicken.Heat a pan or grilling skillet. Add 2 tablespoons of oil.Add the chicken, cover and simmer on med flame for 15 minutes.After 15 minutes on high flame ,burn out access water, add some oil, baste the boti with the malai for 10 minutes. Give it a bbq look. (Alternatively bbq boti or grill on a griller). Brush the boti with salted butter & throw the remaining malai over the the boti, serve immediately with a side of your choice 😋. I served my malai boti with an avocado salad & homemade rogni naan. Enjoy the twist. 🤪
