INGREDIENTS
TOPPING1 cup brown sugar¼ cup cocoa powder , unsweetened1 ¼ cups (315ml) boiling water
BATTER1 cup flour2 ½ teaspoon baking powder⅓ cup castor sugar¼ cup cocoa powder , unsweetenedPinch of salt½ cup (125ml) milk50 g melted butter1 large egg1 teaspoon vanilla extract
METHOD
Preheat oven 180°cGrease a small-medium glass baking dish
Topping: Whisk brown sugar and cocoa in a bowl, set aside.
Batter: Whisk flour, baking powder, caster sugar, cocoa powder and salt in a bowl.
In a separate bowl or jug, whisk together the butter and milk, then whisk in the egg and vanilla.
Pour the egg mixture into the flour mixture. Mix until combined - it will be a very thick batter.
Spread into baking dish. Sprinkle evenly with sugar / cocoa mixture.
Carefully pour the hot water over the back of a spoon on top of the pudding.
Transfer to oven and bake for 30 minutes, or until the top of the cake springs back when poked lightly.
Remove from oven, stand for just a few minutes , then serve while warm.

INFO & TIPS
The top will be a bit crusty, like the top of brownies.
Batter is very thick so try to spread as evenly & thinly as possible as it does rise triple in size 🤷🏻♀️.
As seen by pic posted its a soft cake in the center with chocolate sauce around. So spoon over the sauce when serving
