INGREDIENTS
¼ cup sugar¼ cup water
3 eggs2 cups milk½ cup dessicated coconut 1 tin condensed milk
Nestle cream
METHOD
Add sugar and water to a saucepan and boil on high heat until it forms a light caramel. Do not stir.
Pour the caramel mixture into a Pyrex dish or mould.
Beat eggs, milk, coconut and condensed milk. Pour mixture into your dish over the caramel.
Fill an oven pan with water to make a water bath and place your dish in the pan.
Bake for an hour in a pre heated oven on 180 degrees.
Once cooled spread a thin layer of nestle cream and decorate as desired. If you used a mould, turn the pudding out on to a plate and then spread the cream.
Refrigerate and serve chilled.

You could use canned peaches, strawberries, nuts, or chocolate to decorate
