INGREDIENTS
125g melted butter280ml castor sugar 1 tablespoon sunflower oil2 extra large eggs1 tablespoon vanilla essence½ cup cocoa powder½ cup cake flourGood pinch saltChopped chocolate chunks/ or choc-chips/ or M&M'sOptional- ¼ cup chopped pecan nuts
Topping-1 slab dark chocolate (melted)Chopped nuts
METHOD
1. Preheat oven to 170°C.2. Lightly grease 20cm square baking pan. Line with baking paper; set aside.3. Combine melted butter, oil and sugar together in a deep bowl. Whisk well for about a minute. 4. Add the eggs and vanilla; beat for another minute until lighter in colour.5. Sift in flour, cocoa powder and salt.6. Add in chocolate chunks & nuts. 7. Gently fold the dry ingredients into the wet ingredients until JUST combined.8. Pour batter into pan, smoothing the top out evenly. OR instead of chocolate chunks into batter, top the poured batter with chocolate chunks or choc chips or m&m's.9. Bake for 25min, or until the centre of the brownies is just set to the touch (if testing with a toothpick, the toothpick should come out dirty for fudge-textured brownies).10. Remove and allow to cool.11. Melt dark chocolate, pour over.12. Sprinkle on chopped nuts/choc-chips/ M&M's. 13. Allow chocolate to set and brownie to reach room temperature. 14. Slice into 12-16 pieces. 15. Serve with vanilla ice-cream.#mamataughtmewellrecipes
