Mutton chunks chop in:red onions tomato pieces salt tumeric powder little ground dhania (coriander)/Jeeru (Cumin) red chillie garlic paste add grounded ginger tomato puree little and saffron water. mix all together. I cut carrots added to this marinate and drizzled olive oil and green chillies chopped. Add a cup of water. just place in tagine and cook on low heat.I didn't open the lid. Cooks very slowly on low heat. I cooked it for over an hour I was curious to check because mutton takes long to get tender. I lastly drained and rinsed a tin of chick peas and added to pot. Came out very tasty, I chopped green dhania (coriander) and served.

this is to do with slow cooking and the earthen pot gives a great flavour. the pot is very fragile and has to be maintained well... cleaning it oiling etc....
