250g choice butter 2 ¼ cups cake flour¼ cup icing sugar¼ cup corn flour1 teaspoon vanilla essence2 Tablespoon milk for dipping rolls,(reserve 1 Tablespoon to mix the dough) 250g fresh pitted datesPinch salt Pinch of baking spice, cinnamon, nutmeg Dessicated coconut coating Colouring optional, I coloured pink with some coconut. Use colour as desired.
In a mixing bowl, add butter and icing sugar whisk till combined add vanilla essence, cinnamon and nutmeg. Add the cornflour followed by cake flour and combine,use milk if necessary, all depends on the flour brand you using, break off pieces of dough, flatten a small disc, now place a piece of Kajoor (Dates)/date and seal with both seam meeting at the back. Place milk in a saucer, take Kajoor (Dates) roll and dip into the milk, next into the dessicated coconuts. Place on a grease baking tray and bake for 15-20 minutes until coconut starts getting light brown.
