INGREDIENTS
2kg prawns*
4 tablespoon garlic1/2 Cup lemon juice2 teaspoon salt4 teaspoon kashmiri chillies1 teaspoon tandoori spice1 teaspoon black pepper1 teaspoon fish spice
1/2 Cup mayonnaise 1/2 Cup tomato sauce125ml fresh cream
125g butter
METHOD
Place a pot on the heat, add butter to melt then add garlic and allow to Saute on low heatAdd spices and lemon juice - Saute for a few minutesAdd mayonnaise, tomato sauce and fresh cream - allow to cook for a few more minutes. Remove from heat and cool sauce completely Add prawns and allow to marinate for a few hours, I prefer marinating overnightCook on high heat on stovetop with the lid uncovered for 15 minutes stirring occasionally (you may grill in the oven if you prefer)Garnish with chopped coriander

* clean, devein and shell prawns, or if you prefer to leave the shell on like I have, feel free to do so, I find keeping the shells on adds a whole lot more flavour
Serve with garlic rolls, savoury rice and chips
