INGREDIENTS
170g butter170g caster sugar3 eggs170g flour1 teaspoon baking powderCoffee powder for dusting*
Syrup:115g caster sugar1 1/4c strong coffee
Frosting:250ml fresh cream250ml mascapone cheese1/2 Cup icing sugar - sifted
METHOD
Preheat oven to 180Grease a 20cm round cake tinCream together butter and sugarAdd in eggsThen add in flour and baking powderBake for 30 to 35mins, until a skewer comes out clean
While the cake is baking add the syrup ingredients to a saucepan on low heat. Stir until sugar dissolves. Allow to boil until slightly thickenedRemove cake from oven and place on a platePoke holes with a skewer and pour over syrupBoth cake and syrup should be warm
For the frosting:Beat cream until stiff peaksIn a seperate bowl whisk together mascapone and sifted sugar until smoothFold whipped cream into mascapone mixture. Keep chilled until ready to frost cake
