INGREDIENTS
2 cups Flour3 teaspoon baking powder¼ teaspoon saltPinch of paprika2 tablespoon spring onions1 cup Cheddar Cheese½ cup red & yellow peppers1 teaspoon dried parsley or 3 teaspoon fresh parsleyPinch of black pepper3 Eggs100ml Cooking oil300ml MilkSmall tin Creamstyle Corn1 cup cubed chicken cooked with butter, salt & pepper, chicken spice & GarlicOptional 125g Mushrooms
METHOD
Sift flour, baking powder, salt & paprika. Add mushrooms, chicken, spring onion, cheese, peppers, parsley & black pepper.
In another bowl whisk eggs, oil and milk. Add to dry ingredients, mixing until just combined. Spoon into greased muffin tins, filling to two thirds full.
Bake in preheated oven at 200 degrees C for 15-20 minuets or until golden brown. Serve warm with butter.
I omitted the chicken and mushrooms
