INGREDIENTS
2 tablespoon gelatine powder
125ml cold water
415g castor sugar
125ml boiling water
1 teaspoon rosewater
Food colourants of choice
Icing sugar for dusting
METHOD
Spray 2 baking trays with non stick spray.
In the mixing bowl of a electric mixer, soak the
gelatine in the cold water. Set thE mixing bowl
over a double boiler, And allow the gelatine to
melt. Remove from the heat. Add the castor
sugar and boiling water. Attach the bowl to
mixer. Using the whisk attachment. Beat on high
speed for 8-10 minutes until the mixture is thick
and shiny. Add rosewater and stir through.
Divide the mixture into 2 parts and add to each
the colourant of choice. Mix well and than pour
the mixture into the prepared pans to a depth of
1.5 cm. Refrigerate before cutting into desired
shapes and dust with icing sugar.
For a traditional marshmallows, keep white and
add vanilla essence instead of rosewater
