Descale and gut fish. Keep aside. Heat vegetable oil. Then add mustard seeds,jeera seeds,and Methi (Fenugreek) seeds. Allow to cook then add the chopped onion and brown. Add the fresh garlic and cook further for 2 minutes. Add all the dry spices and cook for a few seconds. Add in the fish masala then the grated tomatoes plus the sugar to taste. Add in fresh lemon juice (according to how tangy you prefer). Then add the cleaned fish and chopped dhania (coriander). Allow to simmer on low for 5 minutes until fish is heated through. Serve hot with roti!
