INGREDIENTS
Boil pasta of choice in salted water and 2 tablespoon oil (if using 1 pack = 500g pasta) keep aside
1 onion chopped2 tablespoon oil (I used 1 tablespoon oil and 1 tablespoon butter)3 garlic cloves pressed SaltBlack pepper4 teaspoon course red chillies2 teaspoon Italian herbs75g tomato paste500ml fresh cream250g mozzarella cheese gratedFreshly chopped parsley
METHOD
Braise onion in oil and butterAdd garlic and spices, allow to braise for a minute then add in the tomato paste and cookAdd in the cream*¹Toss in pasta and cheese and heat through until cheese has meltedSprinkle over parsley before serving
INFO & TIPS
*¹ I added in 375ml cream for the sauce and added in the remainder when heated through before serving
I also added in sliced and fried sausages
