Caprese Chicken Pasta Rec cred: Ruhana EbrahimPic cred: @mama_taught_me_well Ingredients:4 large chicken fillets1 tablespoon olive oil1 teaspoon salt½ teaspoon pepper½ teaspoon dhana jeeroo powder½ teaspoon ground green chillies1 tablespoon lemon juice1 tablespoon garlic paste4 mozzarella slices1 tomato (sliced)handful of fresh basil (chopped) Balsamic Reduction-½ cup balsamic vinegar2 tablespoon brown sugar1 teaspoon raw honey Pasta Sauce-4 large tomatoes (liquidized),1 onion (sliced),2 tablespoon oil,Cinnamon stick,½ teaspoon garlic paste,1 teaspoon chilli powder,Pinch turmeric powder,1 teaspoon dhana jeeroo powder,½ teaspoon salt,1 small sachet tomato paste,Pinch sugar. Also needed-250g pasta of choice Grated Mozzarella cheeseFreshly cracked black pepper Method:Chicken-1. Preheat oven to 200°C.2. Mix together balsamic vinegar, sugar and honey and reduce to half on medium heat.3. Mix oil, spices, garlic, chillies and lemon juice and rub onto fillets.4. Place chicken in oven proof dish and sit in refrigerator for 15 minutes.5. Bake chicken for 20-30min till no longer pink but still moist.6. Place mozzarella slices and tomato slices on each chicken fillet.7. Bake for an additional 5 minutes or until cheese is melting & tomato has softened.8. Top with fresh basil and balsamic reduction. Pasta & Sauce-1. Heat a pan on medium heat and add onions and cinnamon, frying until golden.2. Add tomatoes, tomato & garlic pastes and spices and allow tomato water to burn out and tomato to thicken into a sauce.3. Boil pasta with a pinch of salt & drizzle of oil till al-dente, then drain.4. Swirl pasta in sauce, sprinkle on cheese.5. Top with caprese chicken & sprinkling of black pepper. Note: May add fresh cream to pasta sauce for a creamier richer taste.
