INGREDIENTS
1 can Gram Dhal @saikavfoods, 1 onion chopped, 1/4cup oil, 1/2 teaspoon cumin (Jeeru (Cumin) seeds)seeds, 1 fresh red chilli (remove stem, slightly slit), 6 curry leaves or a small sprig,1 large tomato & 6 pieces cashew nuts, liquidise with 1/3cup of water, 1 medium size brinjal (aubergine/eggplant), Rinse, remove the top & cut into blocks (not too big or too small).
Spices : 1 & 1/2 teaspoon mild kashmiri chilli powder @gorimasculinary, 1 teaspoon paprika powder, 2 teaspoon achaar (pickle) masala @gorimasculinary, 1 teaspoon dhana Jeeru (Cumin) powder @gorimasculinary, 1/4 teaspoon fine black pepper, 1/4 teaspoon tumeric (arad (Turmeric)) powder, 1 teaspoon fine salt or to taste (I used Himalayan salt),1 & 1/2 teaspoon crushed garlic @aminaswondespice.
METHOD
Heat oil in a pot on low flame. Add Jeeru (Cumin) seeds & when seeds start to splatter add the onion, chilli & curry leaves. Sautè for 3 to 4 minutes or until onions start to change colour. Add the tomatoes & spices. Mix well, cover with lid & cook for 5 minutes on low flame. Then add brinjal & 1 cup hot water, stir & cook on low flame for 15 to 20 minutes, stirring occasionally. I added 1/2cup water while cooking so that it doesn't dry up or scorch. Then add in the Saikav Gram Dhal @saikavfoods. Carefully stir, cover with lid & simmer for 5 minutes on low flame. Garnish with chopped dhania (coriander). Serve with roti's or basmati rice. Enjoy😋❤ #cooking_made_simple_
