INGREDIENTS
3 cups milk 1 cup sugar125g butter2 cups tasty wheat ¾ Elachi (cardomom)½ cardamon sticks5 eggs¼ teaspoon. yellow food colouring
METHOD
*In a bowl beat the milk, sugar, eggs, and yellow food coloring till the sugar is dissolved In a pan melt the butter till bubbles begin to appear and add the tasty wheat and braise it till the color of the tasty wheat changes to a light pink and till there is a strong smell (this will take approx. 15 minutes) STIR continuously or it will burn*Remove the pot aside and pour the milk mixture and stir until smooth, do not leave any lumps*Once the mixture is smooth return it to the stove and cook on medium heat (keep stirring so it doesn’t get lumpy)*Once it begins to thicken and the milk is being absorbed lower the heat and cover the pot with a lid to simmer for approx. 5 minutes*Do not over dry the Sojee (semolina flour) completely or it will become stiff.
