3 medium size chickens butterflied
For marination in big dish : add 1heap tablespoon ginger/garlicpaste, 1/4cup freshly squeezed lemon juice, 1 teaspoon lemon zest, 1/4cup tomato purée, 3/4cup yogurt, big pinch Saffron, 1 teaspoon smoked paprika, 2heap teaspoon peri peri powder, 1 teaspoon garam masala, 1/2 teaspoon chilli flakes,1Tbs heaped coarsely ground coriander seeds, 1 teaspoon tandoori powder, 1 teaspoon whole cumin, 2 heap tablespoon coconut powder, salt & chilli powder to your taste, 1 teaspoon turmeric, 1/2cup oil, 1/2cup tomato ketchup, 1/4cupmustard sauce, mix it all up taste it
Marinade and keep overnightnext day put in oven proof pan preheat oven 170deg, leave chickensto roast about 1hr 30min r till cooked thru depends on chicken size,turn in between keep basting withthe sauces,
INFO & TIPS
I parboiled some baby potatoes added
them around the chicken half way thru, if u like add
few tomatoes cut into wedges,once done garnish
with coriander, serve with salad chips, r poori/roti
bread rolls, whatever u like…...
