Vegetables- I used today... 1 packet green beans cleaned4 carrots cut in chunksHandful papri12 pickled onions4 potatoes cut in 4s1 packet marrow cut up2 brinjals cut in chunks
METHOD
Braize 2 onions in ghee (Clarified butter) add 1 teaspoon whole jeeru (cumin), 1 stick tuj (cinnamon stick) add carrots beans and Papri(these veggies take long to cook) add 1 tablespoon ginger garlic1 tablespoon dhana1 tablespoon salt2 teaspoon red chillies ½ teaspoon haydar3 liquidized tomatoesAdd water and allow to cookMeanwhile make your dokras. 2&½ cups Mealie meal2&½ cups flourAdd ½ teaspoon chillies½ teaspoon haydar1 teaspoon dhana½ teaspoon salt1 teaspoon ginger garlicHandful Methi (Fenugreek) bhajieHandful shredded dhania (coriander)½ cup hot oil(must be hot) Make dough with boiling water. Make into dumplings and set aside.Then add potatoes, pickled onions Marrow and brinjal top pot up with water and allow to cook. Until almost done then add your dokras close lid and cook nicely.. A sachet of tomato paste maybe added if gravy is to thinAdd 1 tin butter beansCurry leaves and chillies.. Cook until well done but not mushy
