Lamb Layered Biryani
RECIPE
1 kg lamb..washed,trimmed and cut into equal sized pieces..drain well
Marinate2 tablespoon ginger garlic paste2 tablespoon chilli garlic paste1 tablespoon whole cumin..jeeraa seeds2 tablespoon of lemon juice or vinegar2 teaspoon rough salt..adjust and add more if needed1 heaped teaspoon of dhana jeeraa powder3 teaspoon crushed red chillies1 heaped teaspoon chilli powder1 heaped teaspoon tumeric2 tablespoon tomato paste2 cinnamon ..2 cloves..3 elachie..Staranise optional
2 cups of crushed fried onions1 cup of raw tomato..or half cup boiled pureed1 and half cup maas or yoghurtHalf teaspoon of saffron..roasted and steeped in boiling waterA handful of mint leaves6 to 8 whole green chilliesAdd all this to the meatAnd allow to marinateAdjust salt and chillies if u want
2 +half cups parboiled rice..in salted water1 +half cup boiled Masoor (Back lentils)..add salt and half teaspoon tumeric3 potatoes..cut into chunks..fried on low So it cooks throughBut not brown..set aside
In a flat heavy pot add half cup mixed ghee (Clarified butter) and oil..sprinkle little rice and Masoor (Back lentils) firstAdd in the marinated meat..but reserve some masala in the dishThe meat must not be a single layer..it must be compactTo the reserved masala mixture add the Masoor (Back lentils) and ciat the Masoor (Back lentils)Add the Masoor (Back lentils) over the meatNow add the potatoes and gently push into the Masoor (Back lentils) till its barely visible
Add some saffron and yellow colour water to the riceAdd over the Masoor (Back lentils) mixtureAdd quarter cup ghee (Clarified butter) overAdd fried onions if u likeNow add 1 and half cups of water for steamingPreferably boiling waterCover with foil well
Steam on Stove top for 45 minutes to 1 hour on medium to low heatPre heat the oven to 180 to 200 degreesPlace the pot in the oven for another 45 minutesSwitch off ..and serve
Boil 4 eggs..perl and cut in halvesChopped greens are optionalServed with sour milk dhaiPapads
