INGREDIENTS
125g soft butter (I used storkbake)½ cup sugar (I used castor sugar)1 egg2 cups desiccated coconut 4 tablespoons oil1 teaspoon vanilla essence 2 teaspoons baking powder 2 cups flour (adjust)
METHOD
Cream butter and sugar until creamy. Add egg and vanilla essence and mix well. Add in the oil, desiccated coconut, baking powder and enough flour to make a soft dough. Refrigerate dough for 20-30 minutes. Roll out and cut out shapes with a biscuit cutter. Sprinkle each biscuit with 100’s and 1000’s.Bake in preheated oven oven at 180 for 15 minutes or until light golden colour
