INGREDIENTS
1kg chicken pieces of your choice (I used drumsticks and chicken fillet)Salt and Pepper for seasoning3 tablespoons cornflour3 eggs 3 cups flour3 tablespoons barbecue spice3 teaspoon paprika3 tablespoons sesame seeds1 tablespoon mixed herbsOlive oil spray
METHOD
1. Cut the chicken fillets into strips and make 2 slits across the top of the drumsticks. In a medium bowl whisk together the egg with a dash of milk.
2. In a separate large bowl add together the flour spices, herbs and sesame seeds. 3. Mix until well combined. 4. Line a tray with baking paper or cling wrap.5.Rinse the chicken and pat dry with roller towel, season with salt and pepper and dust with the cornflour. 6. Dip the chicken in the beaten egg and then in the flour mixture and transfer to the lined tray. 7. Once all the chicken is evenly coated, transfer to the tray. Pop the chicken in the freezer for 20 minutes and allow the coating to set. (If you resting chicken for longer than 20 minutes pop the chicken in the fridge and not freezer)8. After 20 minutes spray both sides of the chicken with olive oil and air fry in the Vortex Air fryer on 200 degrees for 15-20 minutes, turning halfway.
INFO & TIPS
NB: To maximize crispness, do not overcrowd the basket, rather fry in 2 batches but leave enough space in between the chicken to crisp to perfection.
