5 yolks6TB sugar1 teaspoon vanillaMix well
2and half cups creamHalf teaspoon cinnamonQuater teaspoon ground gingerHalf teaspoon crushed cardomamPinch of crushed clovesHeat the cream and spices, add the egg mix and temper. The sauce shud coat the back of the spatula.
Place into ramekins into a bain marie then pour mix. Place into preheated oven 150c bake for 30mins.Let cool place in fridge overnight.
1 teaspoon sugar for each ramekin, spread evenly. Place under a grill or blowtorch until crisp.Best eaten the same day.
