RECIPE
3-4 chicken fillet cut into strips1 teaspoon peri peri masala*1 teaspoon Green chillies*Salt*Pepper*Fresh garlic chopped*1 onion quartered (I sliced mine)Robot peppers large cubes (I made small cubes)½ tray mushrooms cooked and kept aside2 carrots julienned
Heat a large pot/wok with 2 tablespoon oil (I used half ghee (Clarified butter) and half sesame oil) Add spices (*) and fry for a few secondsAdd chicken and onion and allow to cook till done then add in 2 tablespoon soy sauce, peppers, mushrooms and pad Thai sauce. Toss together to heat through and serve immediately garnishing with ½ cup roasted cashews and spring onion
Pad Thai sauce: 3 tablespoon fish sauce2 tablespoon oyster sauce 2 tablespoon brown sugar or honey2 tablespoon tamarind concentrate
Serve with egg noodles
