INGREDIENTS
4 eggs π₯ 1 cup sugar 1 tablespoon vanilla essence 1 teaspoon salt1 Β½ tablespoons baking powder2 cups flour ( can add more if batter is too liquid)Β½ -1 cup milkΒ½ cup cooking oil2 cups desiccated coconut Pink food coloring Β½ cup apricot jam Β½-1 cup water
METHOD
1. Beat eggs and sugar until light and pale
2. Mix flour, salt and baking powder in a separate bowl.
3. Add milk, cooking oil and vanilla essence to the egg mixture.
4. Add the fry ingredients to the wet mixture and mix until smooth batter.
5. Grease the muffin pan and ad the mixture.
6. Bake the muffins at 180 degrees until well baked and golden brown.
7. Let the muffins cool and on a pan add water, jam and food coloring and stir at low heat until the mixture is well combined.
8. Let the mixture cool and on a plate pour the coconut.
9. Dip the muffins and the roll them on the coconut until they are completely covered.
10. Serve and enjoy π€€
INFO & TIPS
You can use red food coloring if you donβt have pink color
