INGREDIENTS
125g butter1 cup sugarZest of 1 lemon
2 eggs
½ cup yoghurt1 teaspoon vanilla essence ¼ cup milk2 Tablespoons fresh lemon juice
1 and ¾ cups flour2 Tablespoons poppy seeds1 teaspoon bicarbonate of soda1 teaspoon baking powder¼ teaspoon salt
METHOD
Cream butter, zest and sugar.Add in eggs, beat well.Add in all wet ingredients and mix together well.Whisk together all the dry ingredients and add to batter. Mix lightly until uniformly combined.Tip batter into greased 9x15 inch loaf pan that has been lined with baking paper.Bake on 180°c for about 1 hour. Check at 50 minutes as all ovens differ.
