INGREDIENTS
Simple and quick!
½ cup oil2 extra large eggs, cold1 cup sugar
4 heaped Tablespoons good quality cocoa powder1 level teaspoon baking powder ¼ teaspoon salt½ cup flour½- 1 teaspoon red chilli flakes* see note below👇
METHOD
Mix together lightly. Tip into an 8inch square pan that has been lined with parchment/baking paper.
You may also add chopped pecans/ chocolate on top.
Bake in a preheated oven on 180°c (fan assisted if available) for 20 minutes or until the top is set. Do not overbake, the brownies set and harden as they cool.
Cool completely before slicing with a sharp knife.
Best served warmed up with ice-cream and a drizzle of hot fudge sauce (refer to Smith Island Cake, recipe in profile).
INFO & TIPS
We used 1 full teaspoon of chilli flakes🌶️ and you could really taste it. Start with 1/4 teaspoon and taste the batter, then add more if desired. Enjoy!
