Mini Chocolate Chip Muffins

Ingredients
• 125g melted butter or margarine• 1 tablespoon oil• ¾ cup brown sugar• ¼ cup white sugar
• ½ cup yoghurt• ½ cup milk• 2 eggs• 1½ teaspoon vanilla essence
• 2 cups flour• 1 teaspoon baking powder• ½ teaspoon salt• ½ teaspoon bicarbonate of soda
• 1 cup chocolate chips
Method
In a bowl, mix together the melted butter, oil, brown sugar and white sugar until well combined.
Add the yoghurt, milk, eggs and vanilla. Mix well.
Add the flour, baking powder, salt and bicarbonate of soda. Mix gently until just combined.
Fold in the chocolate chips.
Spoon the batter into mini cupcake liners and sprinkle extra chocolate chips on top.
Bake at 180°C until golden and a skewer inserted comes out clean.
