INGREDIENTS
brinjals - cut in cubes
1 oinion - slices
whole garlic
pepeprs - but in cubes
oil
salt
a few dry red chillies
1 teaspoon mustard seeds
¼ teaspoon borrie
1 tomatoe
METHOD
add oil to the pot, add mustard seed,whole red chillies, a few garlic pods a few curry leaves..add onion and the ¼ teaspoon borrie - allow to cook until light brown.. thereafter add your brinjal and peppers, mix with the ingredients in the pot.add tomotoe and salt.. mix well.. allow to cook for 5 minutes
thereafter add 1 cup water (it will vary on the quantity u cooking) cover pot with lid, and allow to simmer until all water is absorbed.. this would be about 15 minutes.
INFO & TIPS
this goes well as a side dish for dhal and rice.. or chops etc.
