INGREDIENTS
Preheat oven to 180°C.
Dry Ingredients: 1½ cups sugar1¾ cups all-purpose flour¾ cup unsweetened cocoa powder2 teaspoon bicarbonate of soda (baking soda)1 teaspoon baking powderPinch of salt
Wet Ingredients: 2 eggs1 cup buttermilk1 cup lukewarm water mixed with 1 tablespoon strong black coffee½ cup oil2 teaspoon vanilla essence
Chocolate Ganache Icing 🍫 Ingredients: 230g Cadbury Milk Chocolate (150g + 80g)¾ cup fresh cream
METHOD
Sponge Cake ■ In a large mixing bowl, whisk together all the dry ingredients until well combined.■ Add the eggs, buttermilk, coffee-water mixture, oil, and vanilla essence to the bowl.■ Using a hand mixer, beat on medium speed for about 2 minutes until smooth.■ Divide the batter evenly between two greased and lined 20 cm round cake pans.■ Bake for 30 - 35 minutes, or until a toothpick inserted in the center comes out clean.■ Allow cakes to cool completely before frosting.
Chocolate Ganache ■ Melt the chocolate in the microwave, stirring every 20–30 seconds until smooth.■ Once melted, stir in the fresh cream until fully combined.■ Chill the ganache in the fridge until slightly firm.■ Beat with a hand mixer for about 1 minute, just until it begins to thicken and resembles icing. ⚠️ Tip: Don’t overbeat overmixing can cause the cream to split.■ Spread over cooled cake layers and decorate as desired.
