RECIPE
For the halwa(soji (semolina)), take ghee (Clarified butter) add in elaichi, saffron, and 1 cup soji (semolina), braise till light pink then serparately boil - Water and sugar together with orange colouring, & few tblspns of Klim(optional). -once braised add in sugar water and let it cook lastly add some elaichi powder
CHANA (chickpeas)- 2 tins of chickpeas (can even boil at home but store bought is easier) - Braise 1 onion in ghee (Clarified butter) with chillies & jeeru (cumin) once braised take out onions & blend into fine mixture with some water- Once blended add back to pot & Add 1tspn Ginger Garlic, Haldi, Chilli Powder, Salt, crushed jeeru (cumin) & Shan Chana/Choley Masala, Then add in the chickpeas and let it cook with some water, Lastly when done add in some Kasuri Methi (Fenugreek)..
ALOO TARKARI (5-6 POTATOES cut medium sized) Add potatoes in water to boil in the same water add in- 2 tablespoon Kalunji, - 1 tablespoon Fennel seeds- Chilli flakes, haldi, chilli powder, salt & Chaat MasalaOnce potatoes are cooked mash a few in the pot which will create a little thick gravy then add in 2-3 tblspns of Any sweet and sour Achaar (I added mango mazina achaar)
