INGREDIENTS
Base:1x200g Tennis Biscuits, crumbed30g Coconut100g Margarine
Filling:1x 80g packet Lemon Jelly125ml Boiling Water125ml Cold Water250ml Orley Whip - Beaten1 tin Caramel100g Grated Peppermint Crisp Chocolate
METHOD
For the base mix all the ingredients together and press into a rectangular glass pyrex dish.
Dissolve jelly in boiling water, add cold water and allow to cool.Beat Orley Whip until thick and mix with Caramel.Add jelly and 50g peppermint crisp.Pour mixture over biscuit base and refrigerate until set. Sprinkle the remaining chocolate over just before serving.
