Adapted this recipe by Chef Ajay
INGREDIENTS
1 cinnamon stick1 bay leaf1 or 2 pepper corns1 whole elachie1 TB whole cumin1 red onion chopped1 teaspoon each of ginger and garlic paste1 grated tomatoFew tablespoons of tomato pasteChopped green chilli (optional)Chilli powderTumeric powderdhania (coriander) Jeeru (Cumin) powderGaram masala Salt and sugar ( half teaspoon each)Paneer cubesDried Methi (Fenugreek) or Kasturi Methi (Fenugreek) crushed(optional)
METHOD
Heat oil,add in cinnamon stick,bay leaf,peppercorns,elachie and whole cumin. Fry gently for a minute.Add in the chopped onion and ginger/garlic paste and fry for another minute.
Add in chilli powder,dhania (coriander) Jeeru (Cumin) powder and tumeric,stir well,then add in chopped green chilli if using.
Add in grates tomato and tomato paste,salt and sugar, add a splash of water and cook until the oil separates. Set aside.
In a saucepan heat oil,add in cumin seeds,peppercorns and ginger and garlic paste,then add in chilli powder,and tumeric.
Fry the paneer on a gentle heat for about 2 minutes. Garnish with the Kasturi Methi (Fenugreek) if using.
Add the fried paneer to the sauce.Stir well taking care not to break the paneer,adjust seasonings and serve.
INFO & TIPS
I de-seeded the chilli as I enjoy mild food
I omitted the Kasturi methi as I didn't have any
I used chopped fresh ginger and garlic instead of paste
