Fried brinjals, potato cubes & peppers get saucy in a spicy tomato-onion masala.Rotis were made for this kind of scoop-and-savor situation! 😋

3 medium brinjalsCut cube and fry1 large potatoCubed and fried1 green pepper slicedFried1 ½ onions (chopped)Curry leaves 6-72 tomatoes (chopped)2 green chillies sliced1 teaspoon gg paste
*Fry onions in oil with curry leaves until golden brown.
*Add 1 teaspoon gg and sauté.
*Add spices:Salt to taste1 ½ teaspoon red chilli powder½ teaspoon turmeric1 teaspoon coriander powder1 teaspoon cumin powder
*Add tomatoes, green chillies and a little water. Close lid for tomatoes to soften.
*Add in fried vegetables and mix. Add a little water.
*sprinkle ½ teaspoon garam masala over. Close lid and leave on low heat for 10 - 15 minutes.
Serve with roti and spiced yoghurt.
