(Spiced Indian Shortbread Cookies)
INGREDIENTS
Ingredients: 250g butter1½ cups white sugar2 egg yolks1 cup oil (chill in the freezer for 40min before use)½ cup Taystee Wheat½ cup cornflour2 teaspoon baking powder½ teaspoon bicarbonate of soda1½ teaspoon Elachi (cardomom) powder1½ teaspoon nutmegCake flour (as needed to form a soft dough)Whole almonds (for topping)
METHOD
Method: □ Cream the butter and sugar until light and fluffy.□ Add the egg yolks and chilled oil. Beat well until fully combined.□ Mix in the Taystee Wheat and cornflour.□ Sift together the baking powder, bicarbonate of soda, Elachi (cardomom) powder, nutmeg, and enough flour to make a soft, smooth dough.□ Roll dough into small balls (about 20g each) and place on a lined baking tray.□ Press a whole almond gently onto the top of each ball.□ Bake at 180°C until light golden brown.
Tip: Chilling the oil before baking helps the Naan Khatai develop classic cracks on the surface for a traditional look and texture.
