INGREDIENTS
Potatoes peeled and choppedChopped garlicDried red chilli choppedSalt and black pepper to tasteSome grated tomatoChopped dhania (coriander)ghee (Clarified butter) and oil
METHOD
Heat ghee (Clarified butter) and oil in a pot.Once the oil is heated add the garlic and allow to soften,then add the red chilli and allow to cook for 2 minutes on low,whilst stirring to avoid burning.
Then add in potatoes,salt and black pepper and stir well.Cook for another 2 minutes.
Lastly add in some water,and the grated tomato,adjust seasonings and garnish with dhania (coriander),and cook until soft.
INFO & TIPS
Add a few curry leaves to the hot oil if desired.
If you prefer a milder flavour deseed the chillies.
