INGREDIENTS
Marinate 1 chicken with:2 level teaspoons salt1 heaped teaspoon black pepper, freshly ground3 cloves garlic, minced 1 heaped teaspoon cayenne pepper 1 teaspoon paprika2 teaspoons Italian herbsGenerous drizzle of olive oil
Sauce:80g butter2 big cloves garlic, minced 2 teaspoon Italian herbs ⅓ cup honey½ cup fresh lemon juice1 teaspoon paprika½ teaspoon salt, or to taste
½ a lemon, cut into wedges and charred- for garnish
METHOD
Grill chicken in oven on high until slightly charred but not fully cooked. Bring sauce ingredients to a boil then add in the chicken. Smoke (instructions can be found on our Smokey Porta Strips recipe), then leave to simmer on very low for 20 minutes until it all melds together. Taste and adjust seasoning.
Plate with charred lemon wedges.(We usually grill it in the oven when the chicken is in. You could do it in a hot, dry pan also.) Only add these just before serving and remove and discard thereafter as it may make leftovers too sour.
Best served with naan/pita, chips and salad. Also good with roasted vegetables and savoury rice.
INFO & TIPS
Use fresh lemons, garlic and good-quality honey for the best taste.
It's authentic Italian cuisine so not strong at all. You can add crushed red chillies to the sauce if preferred.
