INGREDIENTS
4 tablespoon ghee (Clarified butter)3 bay leaves1 teaspoon mustard seeds1 teaspoon whole cumin1 medium onion, chopped1 chicken, cut into piecesMarinate in the following:1 teaspoon ground garlic1 teaspoon salt1 tso chilli powder1 teaspoon spice for rice½ teaspoon crushed red chilli1 teaspoon lemon pepper2 teaspoon lemon juice¼ teaspoon turmeric1 teaspoon chicken spice10 baby potatoes, cut in half and friedA handful of baby carrots1 packet baby corn, cut in half2 tomatoes, liquidised1½ cups rice, boiled in salted water
METHOD
1. Heat ghee (Clarified butter), add chopped onions and saute until light brown. Add mustard seeds and cumin2. Add marinated chicken and allow to cook for 15 minutes3. Add fried potatoes, carrots and corn andcook for a few minutes.4. Add tomatoes and allow to simmer for10 minutes.5. Add in cooked rice and gently mix together.Steam in the oven for 30mins.
