Ruhanas red sauce and my sil jam chutney mix
INGREDIENTS
2 packs tamarind (soak in hot water to cover and ½ cup vinegar)strain and discard the seeds. ¼ cup oil2 sprigs curry leaves 1 tablespoon garlic chopped1 tablespoon mustard seeds3-4 teaspoon salt3 to 6 tablespoon wet Methi (Fenugreek) masala4tbls sugar¼ cup apricot jam Crushed red chilli as you like3 or more teaspoon red chilli powder 3kg bulk tomato sauceMore vinegar to thin
METHOD
Heat oil, add curry leaves, mustard seeds and garlic till it's fragrant. Do not burn garlic it will become bitterAdd your Methi (Fenugreek) masala, sugar, jamThen add the strained tamarind pasteAdd the salt, chilli powder and all the tomato sauce. You can add more vinegar to thin it slightly.
