INGREDIENTS
Oil and ghee (Clarified butter)1 onion finely chopped1 carrot gratedfinely chopped garlicfinely chopped gingerGreen chilli choppedFew cloves1 piece cinnamon stickChicken fillet (cubed)TumericChilli pwderDried thymeRoberstons roasted potato spice400 ml chicken stock1 c milk125 ml cream1 tin sweetcornFreshly chopped corianderLemon pepperBlack pepper powderWhole cumin
METHOD
Heat oil and butter, add the cloves and cinnamon stick,then add onions,and the whole cumin. Saute for a minute. Then add in green chilli,ginger and garlic,followed by the chicken and grated carrot.Then add chilli powder and tumeric,the dried thyme and the roasted poatato spice.
Stir well and cook until the chicken is done,adding some water if necessary
Next add in the chicken stock,sweetcorn,cream and the rest of the seasonings.
Mix well and sprinkle with chopped dhania (coriander) before serving,Enjoy!

You may also add cooked mushrooms to the soup if desired
