12 baby potatoes (or 4 regular potatoes)2 tablespoon melted butter2 tablespoon olive oil Salt/Aromat (a South African Spice) and black pepper2 teaspoon dried parsley. 1-2 teaspoon crushed garlic
METHOD
1. Boil potatoes for 15 minutes until just tender. Drain.2. Lay the potatoes on a foil-lined tray.3. Using the back of a flat-bottomed glass, smash each potato until they split open.(If using regular potatoes, cut each boiledpotato in half. Turn them cut-side down and smash)4. In a bowl, mix together the sauce ingredients
Drizzle over each potato. Place in the oven to roast at 200°C for 15-20mins or until the edges begin to lightly char.
