INGREDIENTS
Onion finely dicedGarlic cloves roughly choppedPotato finely chopped
Dried thymeFresh creamBlack pepperGarlic chives chopped
Chicken stock cube dissolved in hot water
METHOD
Heat oil and butter,then saute onions followed by the garlic. Sweat for a minute then add the thyme.
Add in the potatoes,followed by the chicken stock. Cook for 15 minutes.
Blend with a stick blender.
Season with black pepper,add in the chives.Stir in fresh cream and serve with croutons.
INFO & TIPS
Substitute chopped spring onions for chives.
I didn't add salt because the stock cube has salt.
