INGREDIENTS
1 cup all-purpose flour 1 teaspoon baking powder1 teaspoon cinnamon powder¼ teaspoon nutmeg powder⅛ teaspoon clove powder¼ teaspoon salt2 tablespoons unsalted butter, melted1 large egg at room temperature⅓ cup Illovo Brown Sugar¼ cup milk at room temperature¼ cup plain yoghurt or sour cream at room temperature1 teaspoon vanilla essence
Ingredients (glaze)2 tablespoons unsalted butter⅓ cup Illovo Maple Flavoured Syrup1 cup icing sugarPinch of salt to taste
METHOD
1. Preheat the oven to 170°C and spray a doughnut pan with cooking spray. Set aside.
2. Mix the flour, baking powder, baking soda, cinnamon, nutmeg, clove, and salt in a large bowl to make the doughnuts. Set aside.
3. Whisk the melted butter, egg, brown sugar, milk, yoghurt, and vanilla essence until thoroughly combined. Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix, or the batter will become too thick.
4. Spoon the batter into the doughnut cavities (or cut a corner off the bottom of a ziplock bag to pipe the batter in), filling about halfway.
5. Bake for 10-11 minutes or until the edges and tops are lightly brown. Allow to cool for a few minutes in the pan, then transfer to a wire rack to cool completely.
6. In a small saucepan, melt the butter and maple syrup together over low heat for the glaze, whisking occasionally.
7. Once the butter has melted, remove from the heat and whisk in the icing sugar. 8. Taste, and add a pinch of salt if desired.
9. Cool for 2-3 minutes, then dip each doughnut into the glaze.
10. Place the dipped doughnuts back onto the wire rack to cool. Feel free to double-dip! Best served immediately.
