INGREDIENTS
1.5 c self raising flourPlus minus a cup of maas or plain yoghurt 50 g softened butter
Sliced red or white onion Freshly chopped garlicFreshly chopped gingerChopped spinachBlack pepper Salt Chilli powderCayenne pepperOrange pepper spicedhania (coriander) jeeru (cumin)2 eggs1 c of milkGrated cheddar cheese
METHOD
Combine the self-raising flour and softened butter in a bowl. Then,add enough mass or yoghurt to make a soft, pliable dough.
Roll out dough and flatten into a suitable tart or pie dish,that has been well-greased. Set aside.
Heat a few TB of oil and 1 teaspoon of butter.Saute the onion,until it turns golden brown,then add the garlic and ginger.
Cook for a minute then add in the spinach and all spices. Mix well and cook until the spinach is cooked. Allow to cool slightly.
Mix the eggs and milk, until well combined. (you can add more salt,pepper and other spices as well)
Assemble the tart by spreading out the spinach filling,followed by the egg and milk mix,lastly top with grated cheese and bake at 180 for 20-25 minutes or until the tart is set and golden brown.
INFO & TIPS
Use crumbled feta instead of cheddar cheese
Chopped mushrooms can also be added
