Recipe adapted from a YouTube reel
INGREDIENTS
3-4 medium potatoes cooked and grated
1 egg
¼ c cornflour
1 teaspoon black pepper
½ teaspoon salt
METHOD
To the grated potatoes add in the egg,cornflour and seasonings.
Mix well until you have a smooth (almost pliable) dough like consistency.
Shape into hash browns and place on a well-greased tray and leave to set in fridge for 45 minutes.
Heat oil and shallow fry until hash browns are crispy and well-cooked,Enjoy with tomato sauce or as you like it!

You can cook potatoes in water for 10 mins,then cool and grate
I microwave my potatoes in the microwave,by pricking all sides with a fork and cooking each side for 2-3 or even 4 mins (cooking times will vary based on your machine and size of potato)
Adjust seasonings as to your preference
Cooking them first and then frying ensures a soft fluffy hashbrown with a crispy crust,yum!
You may season hashbrowns with paprika and dried herbs if desired.
