INGREDIENTS
400 g chicken fillet cubed3 TB black pepper powder 1 TB paprika1 TB garlic powder 1 TB mayonnaise1 TB lemon juice1 teaspoon chilli powder Salt to taste1TB oil
Butter sauce:Half cup of melted butterChopped dhania (coriander)Chopped garlicChilli powderBlack pepperGarlic powder (A teaspoon of each)
Mix well and baste on the cooked chicken skewers
Lemon and herb potatoes
3 medium potatoes chopped50 ml freshly squeezed lemon juice1 garlic clove chopped2 teaspoon black pepper powder Salt to taste1 teaspoon Cajun spice1TB thyme (crushed) or any other herb if your choice.
In a pot add all the ingredients,and cover with just enough water to cook potatoes. Cook until done
((Optional: add sliced lemon to pot when cooking)Use vegetable broth instead of water for more flavour)
METHOD
Marinate cubed chicken fillets in all the above ingredients. (1 hour)
Thread onto soaked wooden skewers.Fry or Airfry until cooked.
Once cooked top with the butter sauce and serve with lemon and herb potatoes.
INFO & TIPS
Add a tablespoon of oil onto skewers if air-frying and turn over regularly to ensure even cooking.
