3 leftover roast chicken thighsHalf head of broccoli cut upHalf head of cauliflower cut up1 red onion cut up1 big potatoe cut up4 sprigs of fresh thymeSaltPepperOlive oilButter
METHOD
Cut up the chicken in 2Toss all the veggies with olive oil, salt, pepper and thymeAdd butter to bottom of oven traySpread out veggiesAdd chicken in betweenCover with foil and place in oven on 180 degrees for 50 minutesAfter 20 minutes take out foil and place back in oven
