INGREDIENTS
500g brick of butter (MooiRiver, Spar or Bonnita is a good choice) 1 and ½ cups neutral oil (we use sunflower cooking oil) ½- ¾ teaspoon salt, to taste
Special equipment: stick blender (immersion blender)
METHOD
Soften butter by leaving it out at room temperature for a few hours. (Do not melt it, though! ) Place it into a 2-2,5 litre container.
Add in the oil and salt.Mix lightly by hand so that it doesn't splash. Now use an immersion blender to mix well into a homogeneous mixture. It will be very liquidy but refrigerate overnight to solidify before using.
Excellent on bread or rolls, for use in baking cakes and some cookies and for roti.
INFO & TIPS
Store well sealed in the refrigerator and use cold. Exactly like the very pricey 'Modified Butter Spread' that you find in supermarkets.
If you prefer it even softer, increase oil to a total of 2 cups.
