INGREDIENTS
1 cup flour ½ cup rice flour ½ cup semolina (rava) 1 teaspoon. Cumin seed or Cumin powder 1 sprin curry leaves Salt to taste 1½ teaspoon. Pepper 1 egg 4 tablespoon. Double cream Youghurt or curd 4 to 5 cup thin coconut milk or water
METHOD
To make the dosa batter, just throw all the ingredients into a big bowl and blend them until they come together. The batter should be as runny as water.You can also use a food processor, but I prefer a hand blender because it's less cleanup.
Heat a nonstick pan over medium-low heat and add a little oil. Swirl the pan to coat it.
Once the pan is hot, pour in the dosa batter and swirl it around until it forms a perfect circle.
If you want the dosa to be super crispy and thin, use a small amount of the runny batter.
When the dosa starts to turn golden brown around the edges, add a small dollop of ghee (Clarified butter) or butter and spread it all over
Once the dosa is a beautiful golden color, fold it in half and transfer it to a serving dish.
Enjoy your soft and crispy dosa with your favorite chutney!
That's all it takes to make this batter. You can store this batter in the fridge for up to a week.
