INGREDIENTS
¼ cup oil 350g shrimp, cleaned (with or without shells)2 onions, thinly sliced 1½ tomatoes, chopped1 sprig curry leaves1½ teaspoon ginger-garlic paste ⅛ teaspoon turmeric powder1 teaspoon chili powder 2 teaspoon curry powder Salt to taste Fresh garlic (optional, amount to taste)
METHOD
1. Heat oil in a medium pan over medium heat. Add shrimp and cook until color changes, ensuring shrimp do not shrink excessively. Cooking with shells helps maintain size.2. Add onions, curry leaves, and (optional) fresh garlic. Cook until onions are translucent.3. Stir in ginger-garlic paste and cook briefly.4. Add chopped tomatoes, mix well, cover, and simmer over very low heat for 3-5 minutes, or until tomatoes release their water.5. Add turmeric powder, chili powder, curry powder, and salt. Mix thoroughly.6. Continue cooking over low heat, stirring occasionally, until the liquid evaporates and oil separates. Cook for an additional 2 minutes.7. Remove from heat and serve. Garnish with fresh curry leaves, if desired
